Potato Pancakes - Latkes

 I love potato pancakes. I can remember my grandmother making them only a few times when I was little. These are delicious.

Traditional toppings can be sour cream, applesauce, and many other things. Food.com has some suggestions. When I worked at a dinner theatre in Wisconsin, they would serve potato pancakes with their fish fry and melted Red Hots in their applesauce. It was fantastic.


POTATO PANCAKES

3 medium potatoes - peeled & halved
1 small onion, finely diced
3 eggs
2 T all purpose flour
1 T chopped parsley
1 tsp salt
dash pepper

Oil or butter for cooking

Grate potatoes. Place eggs in bowl. With flat beater, beat speed 2 for 1 minute. Add potatoes, onion, flour, salt, parsley, & pepper. Turn to stir speed and mix 30 sec. until well blended.

Heat small amount of oil in 12" skillet over medium heat. Use 3 T of mixture for each pancake and drop into hot oil. Fry until golden, about 4-5 minutes on each side. Serve immediately.


I did add a couple of things from the original, particularly that the onion should be finely diced. You don't have to have a mixer to make these. It will just take a little more time. I recommend using a whisk to beat the eggs and a rubber/silicon spatula for mixing.
